This recipe popped up on my facebook newsfeed via Shape magazine called “Healthy one pot meals”
I hate messes ( who doesn’t?) , so to throw all ingredients in a pot seemed like a good idea.
Their recipe was Beef & Barley Skillet but I just switched the meat for ground turkey.
Was really easy to make. I also like that it was a “hearty” meal, filled me up .
The carrots still had a bite to them and the zucchini wasn’t mushy either.
Definitely will make this again.
* I cut my carrots & zucchini into quarter pieces.
- 1 pound lean ground beef ( or turkey/chicken)
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 15 ounces low-sodium beef broth ( I used chicken)
- 8 ounces tomato sauce
- 1 cup water
- 2 medium carrots, chopped
- 1 small tomato, chopped
- 1 small zucchini, chopped
- 1 cup medium pearl barley
- 2 teaspoons Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Place a large skillet over medium heat. Add ground beef and onion, and cook 6 to 8 minutes. Drain if necessary. Add garlic and cook 1 minute. Add broth, tomato sauce, and water, and bring to boil. Stir in vegetables, barley, and seasonings. Reduce heat, cover, and simmer 45 to 50 minutes until barley is tender.
** My edits I didn’t use water I just put a little more tomato sauce/broth
I also chopped up some mushrooms.
Remember you can always change a recipe for the way you like it, don’t be scared to switch something out.

I also use white eyeshadow in the corner of my eyes to brighten my eyes and look more awake or a gold eyeliner to make the colors in my eyes pop.
I didn’t really feel like a salad so ended up using rice.
Ingredients I used:
About 1lb of steak ( I bought it already in strips)
3-4 garlic cloves- minced
1/2 large onion
medium bell pepper
1 can black beans ( drained)
1- Place beef strips , lime ( juice if half) , 2-3 cloves of garlic, 1-2 teaspoons of chili powder, splash of olive oil and let it sit and marinate.
2: Cook rice with chicken broth instead of water (to give more flavor)
3: Cut up bell pepper, onion and 1 clove of garlic
4: Heat up olive oil in pan. Add pepper, onion, garlic for 6-10 minutes ( half way through- add beans)
5: Remove veggies from pan
6: I let the pot sit for a minute to get hot again, then add beef and marinade . Cook for about 3 minutes ( depending how thick you cut your slices of beef/how you like yours cooked)
7: Add Onion, pepper, bean mixture to beef
8: place rice in bowl and top with beef mixture
9: enjoy 🙂
I was going to add avocado but everyone at the store were too hard.
Next time I will add another color of pepper.
Do you like Greek yogurt? It’s all I eat. Yogurt is great as breakfast, snack, or dessert.
I stopped eating yogurt because the consistency was too thin and didn’t like it.
Then someone said that they eat Chobani Greek yogurt and I should try it. I loved it all I ate. Thought I don’t really care for their newer flip yogurts.
When I first got into Greek yogurt I feel like it wasn’t as popular as it is now.
FAGE is tasty, has a nice thick & creamy texture.
A few months ago I tried Muller yogurt, I love the strawberry its like a mini dessert.
The past week I tried Oikos by Dannon, it was on a sale and I was like why not. First I tried the peach, pretty good so I went back to get more. I just had the apple pie. It was sooooo good. Definitely great for a snack or dessert.
What is your favorite Greek yogurt brand(s)? Whats your favorite flavor?
I usually like peach, strawberry, & pineapple.
Another great thing about greek yogurt?… Its a good substitute for mayonnaise ( which I hate..yuck!), sour cream, egg for baking, butter, oil, cream cheese.
