Zucchini Tomato Soup

 

Found this recipe on AFamilyFeast . 

It was delicious! I love it because its filled with lots of veggies. Will definitely make this again. Who else loves soup?

  • 1 tablespoon extra-virgin olive oil
  • 1 pound Italian sweet sausage, removed from casings
  • 2 cups onion, diced
  • 1 cup celery, diced
  • 1 cup carrots, diced
  • 2 cups red bell pepper, diced (about one large pepper)
  • 2 tablespoons fresh garlic, minced
  • Pinch red pepper flakes
  • ¼ cup tomato paste
  • 5 fresh plum tomatoes, diced
  • 2 pounds zucchini cut into bite-sized pieces
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 quarts  vegetable broth
  • 1 cup coarsely grated Parmesan cheese, plus more for serving
  • 2 tablespoons fresh basil chopped
  • 1 tablespoon fresh oregano chopped

Place oil in pot. Add sausage and brown over medium heat.

Once the meat has browned, add onion, celery, carrots and bell pepper and sauté for four minutes.

Move the vegetables to the sides and lower heat to medium. Add garlic, pepper flakes and tomato paste to center and cook for two minutes, stirring occasionally. Add tomatoes, zucchini, salt, pepper, broth, Parmesan cheese and Parmesan rinds along with fresh basil and fresh oregano and stir to combine.

Bring to a medium simmer and cook just long enough until the vegetables are tender, about 10-15 minutes.

I’ve been slacking on my blog & sharing recipes here. I’ve been trying to get back in the swing of things.

Here are a few dishes I’ve made the past few months that might give you some ideas for lunch/ dinner.

Sweet potato dumplings & kale soup

I got a great deal on premade mashed potatoes , Simply potatoes ( I ended up getting I believe 8 for free) haha Well the sweet potato one was sort of bland and I did’t really care for them. I was thinking what can I make with them. I decided to make a dumpling/’meat’ball for my soup.

What I used:

  • Pre-made sweet potatoes ( Simply Potatoes)
  • flour
  • egg
  • salt
  • pepper
  • onion powder
  • garlic powder
  • a little flax meal
  1. Mix all ingredients together and form balls.
  2. Boil chicken broth ( use veggie to make this vegetarian) dropped them in until they started to float. About 5 minutes. The broth helps give these more flavor too.
  3. Add kale

I did add carrots the next day . I also separated the dumplings from the broth when I put them in the fridge so they wouldn’t fall apart and turn to mush. I need to make these again but mash my own sweet potatoes.

 

Stuffed Peppers

I remember having this as a kid. Loved it! Its simple & easy to make. I should have taken a phot when I had all the colorful peppers together but we were hungry and there was one lonley one left. My grocery store had peppers on sale for $1 so I bought red, orange, yellow, green! Yum!

There are so many ways to do this but this is how I did it when I made it.

Ingredients:

  • Peppers ( any color)
  • 1 cup dried rice
  • 1lb ground turkey( feel free to use beef or chicken..even sausage)
  • 2-3garlic
  • salt ( for rice & mixture)
  • pepper
  • onion powder
  • tomato juice
  1. Wash peppers,cut off the tops, remove stem/seeds. ( dice the top pieces & set them aside)
  2. Cook rice , I use a cup of dried rice
  3. Brown turkey , add garlic/seasonings, & diced peppers ( from the tops)
  4. Add a little tomato juice and put on low
  5. Once rice cooled down some add it to the turkey. This is up to you if you love rice add it all, if you dont want as much don’t. Mix together
  6. In a deep pan add some tomato juice.
  7. Add turkey/rice mixture into peppers.
  8. Add all of the tomato juice into the pan, I pour a little on top of the peppers too.
  9. Add left over meat/rice mixture and if you didn’t use all of your rice …add it all to the pan into the tomato juice.
  10. In your pre heated oven 350-375F , add you peppers and cook for 30-445 minutes.
  11. The last 5 I put it up to 400.
  12. I use tongs to grabbed peppers into a bowl and add some tomato juice .
  13. Enjoy

You can add whatever you want to these, spinach, onion, mushrooms…whatever you like.

 

Fajita Bowl

I’ve probably shared something similar but this is a favorite go to meal for me.

  • Chicken
  • Fajita Seasoning
  • bell peppers, sliced
  • onions, diced
  • mushrooms, sliced
  • black beans, drained
  • avocado, diced
  • romaine lettuce
  1. Add chicken, fajita seasoning, peppers, onions ,mushrooms. Cook until done.
  2. Add beans, stir . Cook until heated through
  3. Put cut up lettuce in your bowl, top with fajita mixture
  4. Add avocado
  5. feel free to add cheese

Quinoa ‘fried’ rice

This one is tasty! I sometime add diced chicken to this as well.

Chicken sausage, bean, tomato soup

The weather is getting cooler which mean soup season!

Soup is comforting, filling, healthy. This chicken sausage, bean, & tomato soup is rich in fiber & nutritious.  The best part its quick & easy to prepare & make. Perfect for those busy days.
I was sent Muir Glen organic fire roasted tomatoes to try and I knew I wanted to make a soup. It was delicious.

You can take out the meat and make this vegetarian, which I was going to do originally but saw chicken sausage and was like hmmm maybe I should add that.

Ingredients

  • olive oil
  • 1/2 medium onion ,diced
  • 2-3 large carrots, diced
  • 2-3 celery stalks
  • 2-3 garlic cloves, minced
  • 28oz Muir Glen organic fire roasted diced tomatoes
  • Chicken sausage
  • (2) 15oz  cans of white beans , drained
  • 32oz Chicken of vegetable broth
  • bay leaf
  • Italian Seasoning
  • salt & pepper

Directions

Add a little olive oil ( or oil of your choice) to a pan on medium heat.

Add garlic & onion, sautee until soft.

Add celery & carrot

Add a can of beans to blender, add a can of broth. Blend until almost smooth ( tip this is a great way to get fiber, thicken soups, & if you have kids or someone who is picky to hide something healthy from them haha)

Add blended beans to pot along with diced tomatoes, broth, seasonings, other can of (whole) beans.

Cook until veggies are soft, about 20 minutes.

Top with parmesan cheese.

+ Tip you can take out the extra can of whole beans and add pasta if you’d like. Feel free to add a little water or more broth if you want it thinner

Hearty Taco Soup with chicken sausage

One of my favorite meals is taco soup.
Its hearty, filling, yummy, easy to make, cooks quickly, and it’s budget friendly.

I usually have it meatless but sometimes add diced chicken or a can of chicken.
Well within the past month I received a coupon during my checkout at Shoprite for $1.25 off fully cooked chicken sausage. I never noticed it before , probably because its where the precooked, fully cooked, sliced deli meats are. I mostly just buy chicken or ground chicken/turkey so don’t really venture too much into the other meat sections.

Well I checked it out and it was on sale. So with the coupon it was on $1.73 ( originally $3.49)

Johnsonville Chicken Sausage

I was already planning on making taco soup and thought the 3 cheese Italian style with cheese, red bells peppers, & garlic would be good in the soup. The other flavors available are: Cajun , Chipotle Monterey Jack Cheese, Apple & the 3 cheese Italian style.

What you need for the soup:
Taco Soup Ingredients

Chicken broth
Diced tomatoes
black beans, rinsed & drained
kidney beans or pinto beans, rinsed & drained
corn , drained
Taco seasoning
Avocado, diced
*Johnsonville Chicken Sausage ( keep it meatless or add any meat you’d like, already cooked)

Why is this my favorite? You just open the cans, drain & rinse the beans. The just pour it in a pot and cook until heated through. You can use as much or little broth as you want. I usually pour right above the beans & corn. You can also use vegetable broth or even water. Mix in taco seasoning and cook on medium heat.

I chopped up the chicken sausage into slices.

Added them to the pot. Waited until it started to boil. Turned off.

Diced up avocado.

Put soup in bowl, add diced avocado.
I sometimes add broken tortilla chip pieces for a crunch.

The chicken sausage made the soup a little more hearty & filling, as well as added a little extra flavor.
I would buy Johnsonville Chicken Sausage again, next I want to try the apple chicken sausage tastes. I would also use the 3 cheese Italian style in pasta dishes. Yum!
