Blueberry muffin in a mug

Happy new year!

I’m sure many have eating better & healthier in their New Years resolution list.

While I wouldn’t say this muffin  is super healthy but it is delicious and a single serve dessert so you won’t be tempted to have more (unless you make more)

I’m still working out the recipe but  the first try… well second try was great. I ended up putting the first one in to long and it was hard as a rock lol

What I used:

  • 3 tablespoons of Cup4Cup gluten free multipurpose flour
  • 1/8 teaspoon baking soda
  • Small pinch of salt
  • 1/4 teaspoon coconut oil melted ( you can use butter too)
  • 1 tablespoon of Greek yogurt
  • 1 1/2 tablespoons of milk or non dairy milk
  • 1/4 teaspoon vanilla extract
  • 1 1/2 tablespoons of sugar
  • Blueberries fresh or frozen

What you do :

  • Coat mug with coconut oil or nonstick cooking spray
  • Mix flour, baking powder, salt
  • Add yogurt & milk
  • Stir
  • In the same mug I was using I just melted the coconut oil 1/4 tsp to melt and added it to mixture so the cold milk & yogurt wouldn’t re-solidify it
  • Mix
  • Add blueberries on top or mix in
  • Add to mug

Microwave times vary

I started out with 1 1/2 minutes

Keep your eye on it and check

Add up to another minute of needed

I think mine was good at 2 minutes

Let mug cool or use oven mitts to take out of microwave

Tada you now have a personalized muffin to enjoy anytime in about 5 minutes (prep and cook)

Chicken sausage, bean, tomato soup

The weather is getting cooler which mean soup season!

Soup is comforting, filling, healthy. This chicken sausage, bean, & tomato soup is rich in fiber & nutritious.  The best part its quick & easy to prepare & make. Perfect for those busy days.
I was sent Muir Glen organic fire roasted tomatoes to try and I knew I wanted to make a soup. It was delicious.

You can take out the meat and make this vegetarian, which I was going to do originally but saw chicken sausage and was like hmmm maybe I should add that.


  • olive oil
  • 1/2 medium onion ,diced
  • 2-3 large carrots, diced
  • 2-3 celery stalks
  • 2-3 garlic cloves, minced
  • 28oz Muir Glen organic fire roasted diced tomatoes
  • Chicken sausage
  • (2) 15oz  cans of white beans , drained
  • 32oz Chicken of vegetable broth
  • bay leaf
  • Italian Seasoning
  • salt & pepper


Add a little olive oil ( or oil of your choice) to a pan on medium heat.

Add garlic & onion, sautee until soft.

Add celery & carrot

Add a can of beans to blender, add a can of broth. Blend until almost smooth ( tip this is a great way to get fiber, thicken soups, & if you have kids or someone who is picky to hide something healthy from them haha)

Add blended beans to pot along with diced tomatoes, broth, seasonings, other can of (whole) beans.

Cook until veggies are soft, about 20 minutes.

Top with parmesan cheese.

+ Tip you can take out the extra can of whole beans and add pasta if you’d like. Feel free to add a little water or more broth if you want it thinner

What I thought:
I don’t really like taking medicines in pill form because they are usually gross and big and it can be a struggle to swallow. I’m the worst at taking my vitamins for this reason. So having a variety of yummy juices is a great way to take probiotics.

The first day I poured an 8oz glass. The flavor was a bit diluted & wasn’t as sweet. Later that day I experienced some cramping.
I had an 8 oz glass for the next 3 days. I began to enjoy the flavor and I didn’t experience any bloating or cramping. Will I drink this all the time? Probably not, I eat fairly healthy but if I feel a little off and need to get back on track ,I would definitely consider buying again. I would love to try some of the other flavors.
