Totchos with Ore-Ida Tater Tots #OreIdaTotchos #contest

Influenster sent me a great box recently and in it was a coupon to get a bag of Ore-Ida tater tots.I must say I haven’t had tater tots in a long time and forgot how yummy, convenient, & versatile they can be. On Influenster & Ore-Ida they mentioned totchos ( nachos but with tater tots as the ‘chips’). I;ve never eaten totchos or heard of them before so I gave it a go.
I ended up making breakfast totchos ( which I had as a brunch) & then Taco totchos which is great for lunch, dinner, or snack.

Breakfast Totchos

What you need:
Ore-Ida Tater Tots
2 Eggs
Shredded Cheese ( I used cheddar)
Red bell pepper. diced
Onion, diced
Avocado, diced
Salt & Pepper to taste
Coconut oil

-Cook tater tots according to package ( cook as little or as many as you want) Since it was only me, I didn’t use much
-While the tater tots are cooking, I diced up red pepper & onion.(You can choose different veggies.)
-Added a little coconut oil to pan, med-high heat. Add red pepper & onion
– Mix/Scramble 2 eggs in bowl
– Waited 2-3 minutes added eggs to veggies.
– Scramble, until done
– Take off heat.

– Dice avocado

– When tater tots are done. Top with scrambled eggs. Add cheese. Put back in oven for a few minutes until cheese is melted. Top with avocado & salsa. Dig in!

Taco Totochos

The night before I mixed together ground beef ( it was on sale for $1.29 at Target! Not something I normally eat often), kidney bean, black beans, 2 diced plum tomatoes, a little bit of green & red bell pepper, taco seasoning, a little water. I added this to lettuce , olives, & cheese for a salad but had some left overs.

I cooked tater tots in the oven until golden & crispy.
When done I added some lettuce on top so the tots wouldn’t get too soggy from the meat/bean mixture.
Heated up the meat/bean/veggie mix and put on top of the lettuce.
Added cheese, put back in oven until cheese is melted.
Topped with olives & avocado

What I used:
Ore-Ida tater tots

– Beef/Bean mix:
1lb Beef
15 oz can black beans , drained
15 oz can kidney beans , drained
2 plum tomatoes, diced
I had a little bit of red & green bell pepper , diced
taco seasoning
a little water

Romaine lettuce
Cheddar Cheese
