Chicken & Veggie stir-fry bowl

One of my go to meals is this chicken  & veggie “stir fry” . Its easy, simple, and all goes in one pan!

Chicken Stir fry

Ingredients:

  • Chicken Broth
  • Chicken (diced)
  • onion ( diced)
  • garlic ( minced)
  • mushrooms ( diced)
  • green beans or snap peas
  • carrots ( diced)
  • salt & pepper
  • quinoa or rice
  • soy sauce

 

Add some chicken broth to pan on medium-high. Once hot add carrots & onion. Stir.

Make rice / quinoa according to package. Im a fan of Success boil in a bag tri colored quinoa!

After a couple of minutes add chicken . Stir.  Turn down to medium

Add salt & pepper

Once chicken is pretty much done. Add garlic. Stir for a minute.

Add snap peas or green beans & mushrooms. Stir until tender.

Turn off burner.

Add some quinoa/rice. Add chicken & veggie mixture. Top with soy sauce.

Yum!

Spaghetti Squash Lasagna

I haven’t had spaghetti squash in awhile. I was at a local farmers market and everything I needed seemed to be on sale. I needed to spend at least $5 to use my debit card. I picked up a few things , including a spaghetti squash.

I picked up ground chicken and had everything else on hand already.

I mean look at that deliciousness!!

What I used:

  • Spaghetti Squash
  • 1lb ground chicken
  •  small onion, diced
  • About half of a red bell pepper, diced
  • mushrooms, diced
  • spinach, chopped
  • garlic, minced
  • about 2 tablespoons of parmesan cheese
  • salt & pepper
  • roasted garlic seasoning
  • Italian Blend shredded cheese
  • olive oil
  • diced tomatoes 15 oz

 

Directions:

Spaghetti Squash Directions

 

Preheat oven to 400 degrees

Cut spaghetti squash in half. Take out the seeds. Drizzle with olive oil & salt.

Place spaghetti squash cut side down. Cook for 30-40 minutes until tender.

While that is cooking get together the mixture. You can add whatever veggies you would like. I had some leftovers that I wanted to use up.

Pour some olive oil in pan on medium.  Once warm add diced onion. Stir. When translucent, add bell pepper and cook for about 2 minutes.

Add garlic. Stir

Add ground chicken. Stir mixture together.

Add roasted garlic seasoning ( you can add garlic powder)

When chicken is cooked, add diced tomatoes & parmesan cheese & stir.

Add chopped spinach. Stir together and turn off.

When spaghetti squash is done. Take a fork and lightly pull inwards all around.

Top with the chicken & veggie mixture.

Then top with shredded  cheese to cover the top.

Put it back in the oven until cheese is melted.

To get the nice browned cheese oven on broil (high) for a couple of minutes.

Eat and enjoy!

Some of my go to quick, easy, delicious meals

Here are some of my go to meals for when I want something good.

Chicken Quesadilla

Most of the time I have most of these ingredients at home. These are great for lunch or dinner.

  • Chicken
  • Tortillas
  • cheese
  • seasoning ( i used taco but feel free to use  fajita seasoning or even just salt & pepper)
  • veggies on hand . I used an orange & green bell pepper
  • avocado
  • salsa
  • oil

I like chicken tender since they cook faster. I add them to pan with a little oil.  As they are cooking I diced and added the bell peppers.

I then added the taco seasoning. Once the chicken was cooked I diced them up and put them back in the pan.

preheat oven to about 350

Next take a tortilla and place it on a baking sheet. Sprinkle a little cheddar cheese on half of the tortilla. Add chicken & veggie mix on top. Sprinkle a little more cheese. Fold over tortilla. If it doesn’t stay put , add a toothpick.

Place in oven and wait until it gets golden brown. I mash up an avocado & salsa to spread on top! Yum!

Roasted tomato soup

I shared this long ago when I first started this blog. Its still one of my favorites. Its very easy to make and healthy too!

If your store has a discount shelf for produce check there for the tomatoes. They are the best for this recipe.

  • 6 overripe tomatoes, diced
  • medium onion, diced
  • 3 cloves of garlic , minced
  • 2 bay leaves
  • thyme ( if fresh use 2 sprigs)
  • 10 peppercorns ( feel free to use regular pepper)
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 1/4 up of olive oil
  • 8 basil leaves ( can use dried)
  • 2 cups + of vegetable or chicken broth
  • Optional * add beans at the end white beans are best chickpeas, cannellini , ect
  • Optional * dice a red bell pepper when you roast

Preheat the over to 375. In a large roasting pan add everything but the broth & basil for about 45 minutes until carmelized.

Let it cool down if you are using a blender. I do this different each time sometimes I will add the roasted tomato mixture and little broth to the blender or sometime just add the broth to the mixture then add to the blender. Whichever works for you.

Puree until smooth or your desired consistency. Add beans to make this healthier and even more filling.

Black Bean Burgers

Black bean burgers are sooo good! I love making them for people who might thin ‘healthy food’ isn’t flavorful , filling, satisfying. These are always a hit.  These do take a bit longer because of the dicing, blending, forming but well worth it.

  • black beans ( 2 x 15oz cans)
  • mushrooms handful
  • red bell pepper 1
  • 1 egg
  • oatmeal 1/2- 3/4 cups
  • cheese
  • spinach
  • salsa
  • avocado
  • onion rolls
  • salt, pepper, paprika, garlic powder, onion powder

Place about 1- 1.5 cans of beans ( drained) into a blender, mushrooms, oatmeal, seasonings, egg until somewhat smooth. place in a bowl and add the rest of the beans . If the mixture is a little watery, add more oatmeal.

Form into patties and place on a baking sheet, I sprayed some coconut oil  before placing them on the sheet.

In a preheated oven ( 350) place the patties in and cook for about 20-30 minutes , until firm.  If you want cheese the last few minutes add it, place back in oven until its melted.

I toast an onion roll, put down some spinach, add a patty, then make an avocado salsa mash on top.

I usually serve it with broccoli or zucchini ( or any veggie) & then make oven fries. One burger will fill you up. Left overs are the best !

Kale Chips

I need a huge oven to make these haha I LOVE kale chips. I devour them . Wash and dry kale. Break into pieces. Add a little olive oil to coat the kale. Sprinkle salt.

Place on a baking sheet and into a preheated oven about 350-375 . Keep an eye on them , they cook quickly 5-10 minutes. I once made a batch for a friend to try and she took to long and I ate the whole batch haha I had to make another one.

Tortellini with a ‘rustic’ sauce

It was late, I was hungry, and there was a deal on Buitoni pasta. I wanted something quick but good..taste and nutrition wise. I saw chicken & prociutto  tortellini . I thought it sounded  interesting.  As I was boiling the tortellini I made a sauce to go with it.

Chopped up 3 plum tomatoes, mushrooms, spinach, olive oil, salt, pepper, garlic, a little sugar. Cook until your desired consistency. Before adding the sauce I tried a tortellini , it was really good. Added the sauce and it complimented it well.

You don’t always have to cook from scratch to have something good.  A mix of premade and from scratch is always a time saver and one of my favorite things to do when cooking.

Spring is almost here , despite the snow we just received here in CT.  That means lighter healthier meals. Load up on veggies!

Zucchini noodles & chicken meatballs

This is one of my favorite go too meals. Its tasty & you can eat a lot of noodles without feeling guilty or bloated afterwards.

Just get a spiralizer & go to town on zucchini. I usually add a little bit of water or chicken broth plus the zucchini noodles in a pan and warm them up and let them get to my desired firmness.

Next the meatballs. I make them with chicken or turkey and use whatever veggies I have in the fridge. I almost always put spinach.

  • ground chicken or turkey
  • spinach
  • parmesan cheese
  • garlic
  • salt
  • pepper
  • onion

Mix together , form into balls, & put on a baking sheet and cook until done.

Once they are done I take jarred sauce, place in a pan and add the meatballs to the sauce. Heat until sauce is hot.

Add it to you zucchini noodles and eat it all up!

Chicken & veggie patties

  • Ground chicken or turkey
  • bell peppers ( used yellow this time)
  • spinach
  • garlic
  • onion
  • salt
  • pepper
  • mushrooms

Mix together, form patties, place on a baking sheet and cook in the oven until done.

I made broccoli and baked fries as sides. Delish!

I don’t eat bread to often so no bun but sometimes do use a romaine lettuce leaf.

 

 

Chicken sausage, bean, tomato soup

The weather is getting cooler which mean soup season!

Soup is comforting, filling, healthy. This chicken sausage, bean, & tomato soup is rich in fiber & nutritious.  The best part its quick & easy to prepare & make. Perfect for those busy days.
I was sent Muir Glen organic fire roasted tomatoes to try and I knew I wanted to make a soup. It was delicious.

You can take out the meat and make this vegetarian, which I was going to do originally but saw chicken sausage and was like hmmm maybe I should add that.

Ingredients

  • olive oil
  • 1/2 medium onion ,diced
  • 2-3 large carrots, diced
  • 2-3 celery stalks
  • 2-3 garlic cloves, minced
  • 28oz Muir Glen organic fire roasted diced tomatoes
  • Chicken sausage
  • (2) 15oz  cans of white beans , drained
  • 32oz Chicken of vegetable broth
  • bay leaf
  • Italian Seasoning
  • salt & pepper

Directions

Add a little olive oil ( or oil of your choice) to a pan on medium heat.

Add garlic & onion, sautee until soft.

Add celery & carrot

Add a can of beans to blender, add a can of broth. Blend until almost smooth ( tip this is a great way to get fiber, thicken soups, & if you have kids or someone who is picky to hide something healthy from them haha)

Add blended beans to pot along with diced tomatoes, broth, seasonings, other can of (whole) beans.

Cook until veggies are soft, about 20 minutes.

Top with parmesan cheese.

+ Tip you can take out the extra can of whole beans and add pasta if you’d like. Feel free to add a little water or more broth if you want it thinner

What’s For Dinner: Tuscan Chicken

Here is another one pot meal for you. This meal takes about 30-45 minutes including prep time. I know school is in or almost back in session and this meal would be perfect to fit in while getting back in the groove of things.

This was delicious , healthy, & filling.

Tuscan Chicken

What you need:

  • 2 Tbsp. olive oil, divided
  • 1 lb. chicken breast tenderloins
  • 1 tsp. kosher salt
  • 1 tsp. freshly ground black pepper
  • 1 tsp. oregano
  • 1/2 tsp. thyme
  • 1/2 yellow onion, diced
  • 3 cloves garlic, minced
  • 12 oz. mushrooms, sliced
  • 2/3 c. sundried tomatoes, chopped
  • 1 (15 oz) can Cannelini Beans, drained and rinsed
  • 2 (15 oz) cans fire roasted diced tomatoes
  • 1 Tbsp. sugar
  • Salt and pepper, to taste
  • Parsley for garnish

 

I didn’t have sundried tomatoes but I did use Amore Sundried tomato paste because I had a coupon for a free product. I found  it by the tomato sauce. They have different kinds os pastes( garlic, tomato, ect)

I didn’t add parsley & I also made mini bow tie pasta and topped this mix on top. I cooked the pasta first then cooked the chicken ( still one pot meal for me!)

 

Directions:

Brown the chicken. Add some olive oil to the pan. Season the chicken with salt & pepper. Add chicken to pan for about 3 minutes each side.

Remove chicken and put on plate, put to the side. Add olive oil to the pan. Add sliced mushrooms in a single layer until golden brown on each side. Do multiple batches if needed.

Add onion , sautee for a few minutes. Add garlic ( & sundried tomatoes if you are using them) , sautee for 2 minutes.  (before I added the other ingredients I add the sundried tomato paste and stirred together for 1 minute)

Add fire roasted tomatoes, beans, seasonings , & sugar. Stir together

Add chicken, spoon the sauce mixture on top. Cover for 10 minutes. Add mushrooms and serve.

I topped the mixture over the bow tie pasta & sprinkled with parmesan cheese.

 

 

 

Sweet Potato & black bean roll ups

Earlier this week I bought 5lb box of sweet potatoes. So I’ve been trying to come up with way to use them.

Today I came up with these wrap ups.

I accidently bought corn torillas so the fell apart a little so did half the mixture as roll ups and then tomorrow will have them just as tacos and not fold them up.

What I used:
Sweet Potatoes ( i used 3 big ones)
Black Beans ( used half of a can)
Corn ( used half of a can)
Red Bell Pepper ( large)
Lime
Avocado
Cheese
Salsa
Mini wraps
Cheese

Seasonings:
Chili Powder
Cumin
Mrs Dash Garlic & Herb
Pepper
Salt

-Dice sweet potatoes and red bell pepper. Put on a baking sheet with a little water or oil and bake until tender. Here I added Mrs Dash, Salt & pepper.
( I took a little bit of red pepper and cut into thin strips and baked for 1-2 minutes or you can eat it raw whichever you prefer)

-Place in bowl

-With a fork mash the potatoes. You can mash half of them or all.

-Add black beans, corn, cheese, a little bit of salsa, cheese, lime juice, chili powder , cumin

– Take tortilla and add the mixture on top add diced avocado & thinly sliced red bell pepper.

-Roll them up and place in the oven for a few minutes on 350 until toasted.
