What’s For Dinner: Tuscan Chicken

Here is another one pot meal for you. This meal takes about 30-45 minutes including prep time. I know school is in or almost back in session and this meal would be perfect to fit in while getting back in the groove of things.

This was delicious , healthy, & filling.

Tuscan Chicken

What you need:

  • 2 Tbsp. olive oil, divided
  • 1 lb. chicken breast tenderloins
  • 1 tsp. kosher salt
  • 1 tsp. freshly ground black pepper
  • 1 tsp. oregano
  • 1/2 tsp. thyme
  • 1/2 yellow onion, diced
  • 3 cloves garlic, minced
  • 12 oz. mushrooms, sliced
  • 2/3 c. sundried tomatoes, chopped
  • 1 (15 oz) can Cannelini Beans, drained and rinsed
  • 2 (15 oz) cans fire roasted diced tomatoes
  • 1 Tbsp. sugar
  • Salt and pepper, to taste
  • Parsley for garnish

 

I didn’t have sundried tomatoes but I did use Amore Sundried tomato paste because I had a coupon for a free product. I found  it by the tomato sauce. They have different kinds os pastes( garlic, tomato, ect)

I didn’t add parsley & I also made mini bow tie pasta and topped this mix on top. I cooked the pasta first then cooked the chicken ( still one pot meal for me!)

 

Directions:

Brown the chicken. Add some olive oil to the pan. Season the chicken with salt & pepper. Add chicken to pan for about 3 minutes each side.

Remove chicken and put on plate, put to the side. Add olive oil to the pan. Add sliced mushrooms in a single layer until golden brown on each side. Do multiple batches if needed.

Add onion , sautee for a few minutes. Add garlic ( & sundried tomatoes if you are using them) , sautee for 2 minutes.  (before I added the other ingredients I add the sundried tomato paste and stirred together for 1 minute)

Add fire roasted tomatoes, beans, seasonings , & sugar. Stir together

Add chicken, spoon the sauce mixture on top. Cover for 10 minutes. Add mushrooms and serve.

I topped the mixture over the bow tie pasta & sprinkled with parmesan cheese.

 

 

 

Easy & Quick dinner -taco & rice bowl/wraps

Dinner taco bowl

Whether you are stretching your dollar or just want a quick dinner this is perfect because you can customize it to your liking.

What you need:

Rice ( I cook 1 cup)

Ground Chicken, Turkey , or beef – I used chicken

Taco seasoning

15oz can of black beans drained ( or kidney/ pinto)

Cheese- I like cheddar

Salsa

Bell Pepper (optional)  – diced

Onion ( optional) – diced

Wraps

Other items you could add:

Avocado , Olives, Tomato, Lettuce

even zucchini, or mushrooms

Directions:

Cook rice according to directions. I like adding some salsa to the rice when its done cooking. Just enough to coat.

If adding the pepper & onion.

Put some oil in a pot. When hot, add onion. Stir for 1-2 minutes. Add pepper. Story for 2 minutes.

Add ground meat. Break up and stir.

Add taco seasoning ( or if you make your own add it to pot) When the meat is almost fully cooked

Stir to coat. Add 1/2 – 3/4 cups of water Stir again

Add black beans. Stir

When done add to a bowl top with cheese & salsa or put mixture in a wrap and enjoy.

Its quick & filling!

I love getting perk’d! Klout sent me SoyVoy Hoisin Garlic marinade & sauce recently.
The first thing I thought was stir fry!

SoyVay

What you need:
Chicken breast
Bell Peppers ( any color) , diced
Green Beans, cut in half or thirds
Onion, diced
SoyVay Garlic Hoisin Sauce
Coconut Oil
Brown rice
Salt & Pepper

I put the chicken in a container & poured some of the SoyVay marinade just enough to cover to let marinade.

Boil water cook rice according to directions. Add salt & pepper

Diced up my vegetables. Bell peppers were $1 a piece to got a yellow & red but choose whichever you prefer. I was going to put carrots but forgot about them. oops Still came out great.

In a pan put some coconut oil ( or preferred oil) . Put green beans in pan and cook until tender. I like mine with a crisp still. Place on plate/in container.

Add more coconut oil, add onion for 1-2 minutes. Add bell peppers. Cook until tender. I added a little black pepper.

Add green beans to mixture. Add some hoisin sauce ( to your preference)

You can either place on plate or container or get another pan.

Put coconut oil in pan, med / med-high, add chicken , cook until done.

Dice chicken, add to vegetable mixture.

Put rice on plate or in a bowl.

Top with chicken & veggie mixture.

This was delicious and will be making this again soon. Maybe this time with carrots and/or snap peas.

The marinade had great flavor. It sort of reminded me of bourbon chicken. It was sweet & a little salty ..in a good way.
This sauce is great for stir fry, grilling, basting, marinade.

Deconstructed chicken pot pie over egg noodles

I was trying to figure out what I wanted for dinner. First it was black bean burgers , then stir fry, then cannellini meatballs over zucchini pasta.
Then I remembered I still had Campbell’s soup for easy cooking creamy garlic & herb with chicken stock that I wanted to try. What can I make with that ? They have chicken pot pie on the package and that started to sound really good on a cold day like today.

I didn’t feel like a traditional pot pie with crust and wanted egg noodles. I also was feeling like mushrooms, this is what I came up with.

Egg Noodles
Chicken ( I prefer chicken tenders)
Mushrooms
Frozen mixed vegetables
Campbell’s Soup for Easy Cooking Creamy garlic & herb with chicken stock
Salt & pepper
Chicken Stock ( you can use olive oil instead)

Boil water ( with salt) for pasta . I used about half of a bag. Cook until done , drain.

Put a little bit of chicken stock to cover bottom of pot. Season chicken with salt & pepper. Place chicken tenders in. Cook a few minutes each side.

Add mushrooms ( cut to the size you want) & stir.

Add frozen veggies.

I added more chicken stock ( using about a 1/4 cup) for the whole dish. I did this so the frozen veggies & mushrooms could cook a bit and season them before adding the garlic & herb soup. It also helps the chicken get nice and juicy.

I took out the chicken tenders and diced the chicken. You can do this before hand. I just prefer this way since its easier to cut and I don’t have to touch raw chicken.

Pour in Campbell’s soup for easy cooking. Stir

Add egg noodles.

Place in bowl and enjoy!

This was really good. Perfect for lunch or dinner on a cold day. I also like it because its only a few ingredients and is done quickly.

15 minute dinner -Mediterranean Chicken Wrap

This what you need :

Rotisserie Chicken

cous cous ( I bought garlic & herb)

Chicken broth

2 plum tomatoes

Feta Cheese

Lemon Juice ( I used a 1/4 wedge from a large lemon)

Pepper

Wraps ( I used whole grain)

First make cous cous, instead of water I used chicken broth to give extra flavor.

while your waiting for the chicken broth to boil, cut chicken into bite size pieces & dice tomatoes.

I am weird and only like my tomatoes cooked & warm. I placed the tomatoes in the with the cous cous as I was waiting for it to cook & fluff up. Also add pepper & Lemon juice

Next you can either mix the chicken in with the cous cous or keep separate.

Then make your wrap

Cous cous w/ tomatoes, chicken , sprinkle with feta = yummo

Next variations Im going to try ; spinach or sundried tomato wraps, add spinach or zucchini

 

I made this again ( 8/20) added sauteed onion, garlic, zucchini

What’s for dinner ? Tomato Basil Chicken

Have been trying to make new dishes lately and have been using Pinterest to find them.
It was between

Skinny chicken and broccoli Alfredo

chicken, spinach, and cannellini beans quesadillas

or tomato basil chicken.
The tomato basil chicken looked easy and not too much work. It was already 8ish so didn’t want to do too much work.
