Chicken & Sweet potato meatball poppers

I’ve been on the hunt for new recipes to try.

I really loved this one I found from Unbound Wellness . I brought some for luch to work the next day and everyone who came in the back room said it smelled great and wanted to know what I was eating.

They were filling and tasted great.

  • 1 lb ground chicken (sub turkey)
  • 2 cups sweet potato, shredded (using a grater or food processor)
  • 1/3 cup red onion, diced
  • 2 tbsp fresh cilantro, chopped  *** ( I used dried)
  • 2 tsp garlic powder
  • 1 tsp oregano powder
  • 1 tsp chili powder
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 2 tbsp coconut oil
  • 2 tbsp coconut flour
  • Juice of 1/2 lime

 

  1. Preheat oven to 400 F and line a baking sheet with parchment paper
  2. Combine all of the ingredients in a large mixing bowl and thoroughly mix until well combined.
  3. Scoop the poppers (you should have 20-25) out using a small scoop, or just your hand, and place them evenly spaced on the baking sheet. Slightly flatten them by pushing them down with your hand.
  4. Bake in the preheated oven for 20-25 minutes, flipping once. Remove from the baking sheet and allow to cool for 5-10 minutes.

Serve with guacamole, salsa, etc.

I mashed up 2 avocado, added garlic powder, the juice from the other half of lime, pepper.

 

I made some Zucchini Bacon Fritters to go with my meatballs. I found these on PaleoRunningMomma .

You need:

  • Shredded Zucchini
  • salt
  • bacon
  • coconut flour
  • egg
  • onion powder
  • garlic powder
  • 1/4 – 1/2 black pepper
  • bacon fat or coconut oil

 

 

Pretzel crusted chicken

So I was thinking what can I make with these? If you follow me on instagram I posted a snack, appetizer, & dessert. Now its time for dinner….Pretzel crusted chicken!!

What you need ::

1lb Chicken tenders
1 1/2 cups of crushed Snack Factory Pretzel Crisps®- I chose the Chipotle Cheddar flavor
1/2 whole wheat flour
2 Eggs
shredded cheddar cheese ( optional)
salt
pepper
cooking spray/ oil- I used coconut oil

First your going to smash up the pretzel crisps, you can do this in a bag or blender.

Next I sprinkled some shredded cheddar cheese in the mixture.

Scramble the 2 eggs in one bowl.
Place flour, salt , & pepper in another bowl.

I cut the chicken tenders in half.

Place chicken in flour, shake off excess. Place in egg, let excess drip off. Place in crushed pretzels. I like putting the chicken down , the covering with the crushed pretzels and patting down. Place on a pan ( sprayed with oil, I used coconut oil) repeat until done.

Place in oven at 350 for about 15-20 minutes flipping in between. Keep an eye on them this was my time for them to be done. Just cut a thicker piece and see if its no longer pink in the middle.

Look at this pretzel crispiness.

Quesadillas in the microwave – easy meal

I forgot to upload this when I made it. Staying in a hotel with only a microwave and trying to figure out things to make that aren’t hot pockets.
I myself never owned a microwave so what to make ?
Quesadillas!!

Get
wraps
Can of chicken
Cheddar cheese
Green pepper ( cut into strips)
Black beans

Tip: If at hotel/college/ or don’t have a can opener , make sure you get cans that you can pull the tops off.

I heated up black beans & pepper before hand.
Depending on microwave keep an eye on it.
I added cheese placed in microwave for 15- 20 seconds until cheese started to melt. I then added black beans , chicken , peppers. Placed in microwave for another 15 seconds then folded the wrap over and gave it another 10 seconds . Play around with times .
Add avocado or top off with some salsa.
