Pumpkin French Toast with maple syrup sausage

Fall is here and pumpkin everything is in full swing.

I opened my email and Cassey from Blogilates had a few new recipes she made.
One of them being pumpkin french toast. I had to make it.

What you need:


1/2 c Almond Milk
1/2 c canned pumpkin
1 egg
Apple, diced
Coconut oil
Maple Syrup
Johnsonville Vermont Maple Syrup fully cooked breakfast sausage

Mix almond milk, canned pumpkin, egg, sugar, cinnamon together in a bowl until blended.

Dip & cover bread

In a pan add coconut oil on medium low. Place bread on the pan for a few minutes to get brown and crispy.


You can do this before, after, or while cooking french toast: Place Johnsonville sausage in pan on medium for 7-10 minutes until cooked through.

Place on plate, drizzle on maple syrup & top with diced apples & cinnamon. ( I mixed the apples & cinnamon together before placing on top)
Place 2 Johnsonville sausages on the side.
Dig in!

The Johnsonville vermont maple syrup sausage paired well with the pumpkin french toast & cinnamon apple. Was a great breakfast .. yummy in my tummy.

I made extra pumpkin french toast so I could have the next morning as well. I just popped it in the toasted oven.


Breakfast for dinner

Awhile ago I was wandering the frozen aisle at the grocery store and stumbled across this Alexia sautee sweets mix of sweet potatoes, black beans,red pepper, corn, onion in a chipotle seasoning. I had it as a side for dinner but really loved having it with eggs in the morning. It was hard to find and then it vanished! I emailed them and they told me they discontinued that blend. Noooooo! So I came up with my own mix, and was craving it the other night.

What you need:
Sweet potato
Red pepper
Can of corn
Can of black beans
Taco Seasoning
Avocado ( optional)

this would also be great with chopped up grilled chicken
you can also sprinkle cheddar cheese

I cook the sweet potato separately then add it in after.
Then dice pepper, onion, garlic.
Add oil to pan and sautee until tender.
Add beans, corn ( half of the can , each)
Add taco seasoning, to your liking . Add a little water if needed.
Cut spinach add to mix, add sweet potatoes.

Make your eggs however you like them.

I like mine with avocado so I topped my sweet potato mix with some.

Its really filling and delicious.

Add grilled chicken and take out the eggs and have it as a dinner ( or breakfast)

Easy cookies

No egg, no flour

Good for breakfast or late night snack without the guilt


What you need

Add ins: dried fruit , nuts , peanut butter , Nutella, flax meal,or chocolate chips

I didn’t measure but here is what I did

-mash banana
-add oatmeal probably 1/2 cup
You don’t want the mixture to be too dry and not to mushy .
-sprinkled some cinnamon
-sprinkled flax meal
-I also added a tablespoon of crunchy peanut butter probably could have used more but my lovely friend only left a spoonful lol

I put these in the toaster oven for 15-20 minutes
Prob 350 degrees

Depending on how you make it you can spread fruit jelly / jam, peanut butter , Nutella when done
