Some meal inspiration

I’ve been slacking on my blog & sharing recipes here. I’ve been trying to get back in the swing of things.

Here are a few dishes I’ve made the past few months that might give you some ideas for lunch/ dinner.

Sweet potato dumplings & kale soup

I got a great deal on premade mashed potatoes , Simply potatoes ( I ended up getting I believe 8 for free) haha Well the sweet potato one was sort of bland and I did’t really care for them. I was thinking what can I make with them. I decided to make a dumpling/’meat’ball for my soup.

What I used:

  • Pre-made sweet potatoes ( Simply Potatoes)
  • flour
  • egg
  • salt
  • pepper
  • onion powder
  • garlic powder
  • a little flax meal
  1. Mix all ingredients together and form balls.
  2. Boil chicken broth ( use veggie to make this vegetarian) dropped them in until they started to float. About 5 minutes. The broth helps give these more flavor too.
  3. Add kale

I did add carrots the next day . I also separated the dumplings from the broth when I put them in the fridge so they wouldn’t fall apart and turn to mush. I need to make these again but mash my own sweet potatoes.

 

Stuffed Peppers

I remember having this as a kid. Loved it! Its simple & easy to make. I should have taken a phot when I had all the colorful peppers together but we were hungry and there was one lonley one left. My grocery store had peppers on sale for $1 so I bought red, orange, yellow, green! Yum!

There are so many ways to do this but this is how I did it when I made it.

Ingredients:

  • Peppers ( any color)
  • 1 cup dried rice
  • 1lb ground turkey( feel free to use beef or chicken..even sausage)
  • 2-3garlic
  • salt ( for rice & mixture)
  • pepper
  • onion powder
  • tomato juice
  1. Wash peppers,cut off the tops, remove stem/seeds. ( dice the top pieces & set them aside)
  2. Cook rice , I use a cup of dried rice
  3. Brown turkey , add garlic/seasonings, & diced peppers ( from the tops)
  4. Add a little tomato juice and put on low
  5. Once rice cooled down some add it to the turkey. This is up to you if you love rice add it all, if you dont want as much don’t. Mix together
  6. In a deep pan add some tomato juice.
  7. Add turkey/rice mixture into peppers.
  8. Add all of the tomato juice into the pan, I pour a little on top of the peppers too.
  9. Add left over meat/rice mixture and if you didn’t use all of your rice …add it all to the pan into the tomato juice.
  10. In your pre heated oven 350-375F , add you peppers and cook for 30-445 minutes.
  11. The last 5 I put it up to 400.
  12. I use tongs to grabbed peppers into a bowl and add some tomato juice .
  13. Enjoy

You can add whatever you want to these, spinach, onion, mushrooms…whatever you like.

 

Fajita Bowl

I’ve probably shared something similar but this is a favorite go to meal for me.

  • Chicken
  • Fajita Seasoning
  • bell peppers, sliced
  • onions, diced
  • mushrooms, sliced
  • black beans, drained
  • avocado, diced
  • romaine lettuce
  1. Add chicken, fajita seasoning, peppers, onions ,mushrooms. Cook until done.
  2. Add beans, stir . Cook until heated through
  3. Put cut up lettuce in your bowl, top with fajita mixture
  4. Add avocado
  5. feel free to add cheese

Quinoa ‘fried’ rice

This one is tasty! I sometime add diced chicken to this as well.

LOVE this serum. I put it on when I get out of the shower every morning. Then apply my moisturizer and make up. I liked how it made my skin look healthy & plump. Its lightweight and absorbs nicely & quickly into the skin. My skin just looked really good.

You can use this day or night. You can use by itself or mix into your moisturizer. It’s up to you.  All you need is 2 drops. I liked that the applicator was a bit different too. Instead of a dropper where you squeeze to get the liquid, you press the button on the top. I guess sort of like a shot. I highly recommend this serum.

Glycolic Fix Daily Cleansing pads $12.99

I really enjoyed using these pads. I think my skin looked cleaner & brighter after using them. They didn’t dry out my skin and they were also gentle on my skin. I even washed my face and used one of these after and stuff was on the pad! Though my cleanser is black, so it could have been that but still, extra cleanser shouldn’t be on my skin anyway.  These do a great job at cleaning & gently exfoliating.  Another one you should try. These are also great for travelling since the container is a screw on cap.

This felt tipped liner pen , easily glides on smooth. With great color pay off & long wear it will make any look you try do do effortless. It’s water resistant & quick drying. It made applying the liner so easy.

Fun Nail Art

I used to post my nails often, I do mostly on instagram . I was feeling uninspired so haven’t really been doing many designs. I thought I’d share some that I’ve done .

I did this for Christmas time but this would be great for Valentine’s Day as well. I use Essie Life of the Party and a gold ( no name/brand) .

Nail Art

I used SinfulColors Calypso , Accent Nail is Milani Gold Glitz , gold details, no brand/name polish

I did this when I furst got into nail art. Paid your nails white. Take pieces of newspaper ( comics work too!) Dip your nail in rubbing alcohol ( vodka also works) Carefully place newspaper piece on your nail, make sure not to move it. Press down, peel off. Put on a top coat 🙂

I used Opi Precisely Pink & Wet N Wild Black . Paint bottom half pink. Take a dotting tool and place dots at the top. I am so bad a straight lines so this helps if your lines aren’t even the dots hide it. Then start in the middle and then the sides.

I did this in the Summer. I loved it and learned a new trick to make colors pop on dark nails. First apply white polish , then your colors.

At first my scalp did get a little oily but unlike before the more I used it my scalp started to balance out a little and didn’t get as oily. This shampoo & conditioner left my hair really soft & manageable. It had a nice lather and was easy to rinse out. My hair was easy to comb after getting out of the shower.  I also loved getting a whiff of my hair through the day. Is it my absolute favorite ? ….No but I did enjoy using it. I would be up to trying one of their other one in the line.

Cranberry Chocolate Chip Cookies #MakeItYours

Nothing is better than warm home made cookies.

Influenster sent my a coupon for a free tub of Country Crock spread to use as well as an easy cookie recipe to follow.

The best part is you can add whatever you want to these nuts, dried fruit, white, milk, or dark chocolate chips, sprinkles , ect.  I decided to add cranberry & milk chocolate chips because those are my favorite combo to make.

Country Crock Cookies

Ingredients

  • 1 cup Country Crock
  • 1-2 cups or your choice of mix-ins
  • 3/4 cup packed brown sugar
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  •  2 tsp. vanilla extract
  • 3 cups all-purpose flour
  • 3/4 tsp. salt
  • 1/4 tsp baking soda

Country Crock Buttery Spread

Directions

  • Preheat oven to 375
  • mix brown sugar, granulated sugar, country crock, egg, egg yolk, vanilla in a large bowl until well mixed.
  • Stir in flour, baking powder, salt, and, baking soda until blended ( dough will be soft & creamy)
  • Add mix-ins into the dough until every spoonful has some of those yummy mix-ins.
  • Drop dough by rounded tablespoons onto ungreased baking sheets 3 inches apart ( I used Reynolds baking sheets)
  • Bake 10-12 minutes until edges are lightly golden.
  • Cool 1 minutes, remove from baking sheets, & cool completely.
  • EAT! nom nom nom

I’ve never heard of this brand before. I applied this everyday when I got out of the shower. The first thing I liked is no fragrance…nothing at all. It does leave my skin looking and feeling healthy. Its lightweight and it absorbs quickly into the skin. It didn’t leave my skin feeling sticky or greasy. I don’t suffer from dry skin but in the Winter , any extra help is always needed. I’m a fan. You can find it at Walmart.

What I liked about this dry shampoo is it didn’t leave any residue in my dark brown hair. Which can sometimes be an issie with dry shampoos. I don’t need a white spot or grey, dull looking hair. I don’t wash my hair every day , since it gets greasy and my hair doesn’t look as great. Dry shampoo over the past 1-2 years has really changed it for me. The scent is nice and does help extend another day without washing.

Love to bake or cook? The pre-cut parchment paper is pack to lay flat. No curling or rolling. These were so easy to use and easy to tear apart if you need a smaller piece. The best part is they made baking and cleaning a breeze. My cookies easily slid off  with no help needed. Clean up I just threw it away, wiped the pan and done. I will be buying these for when I cook and bake. I also used these when I cooked bacon in the oven & meatballs. I also liked that I could use them multiple times. I had a smaller cookie sheet so had use the sheet multiple times as well with the cookie sheet. Had no issues .

I’ve had this before. You know what I used to love doing as a kid with country crock. Being the first one to open and they had the little dollop center. I loved eating that part…alone  (shh) or on my food.  These made my cookies delicious with that nice buttery flavor. This butter is easy to mix in or spread.

I wasn’t sure at first but after wearing it daily , I now like it. I like applying it as you normally would any mascara but then using the ball tip to go over my lashes for some extra volume. These help darken as well as give you volume. I’m not sure if its the wand , formula, perhaps both but it can get a little clumpy. I didn’t have any issues with fall out during the day that I noticed. These definitely make you lashes noticed & bold. I love it!

I thought this was for women but I googled it and its for men lol. I opened the bottle in the shower, poured some in my hand and saw a dark purple and was like oh lala. Then I rubbed it on me and was like,  “oh wow that’s a very manly scent.” I remember they made a product or products for women? Did that ever take off? I gave this to a friend, he said he likes the smell. It has a mix of grapefruit, lavender, cedarwood and praline scents.

Oreos are the best. My pack came all broken, the cookie shown, the back was all smashed. It didn’t stop me from enjoying every crumb though 🙂 Oreo put a twist on their cookie and made them thin. They taste just like original oreos…just thinner and maybe a little more of a crispy texture.Try the mint flavor, they are my favorite because they taste like Girl Scout thin mint cookies.

A year of couponing 

I’ve always been a saver. I couponed here and there but never really thought of it much . If I got a Sunday paper and the inserts had a coupon or two on products I used,  great. For about a year now I’ve really been learning and more aware of what you can save on.

Shampoo , Conditioner, toothpaste are always things you can get for free with the right sales & coupons.

My friend had some health issues and I needed to figure out a way to save on more groceries & personal care items for both of us.

The more I couponed and researched , the more I learned . I also started getting better deals. At first I just wanted to save on  food because we have to eat right ?

Then about a year ago, I saw a deal posted on Instagram and a super savings monster was born. Lol

It was a deal on 2 pack of garnier shampoo & conditioner. They were ringing up for $1 and I had a few $1 coupons making them FREE! I think I had 5 coupons so 5 Garnier Fructis shampoos and 5 conditioners for nothing.

What shampoo & conditioner free? I would look on Instagram for more deals and followed a few people that posted deals at stores I shop at.

I learned that if you put a little effort each week you can get things you need for free , make money, or at a very low price.

No need to be an extreme couponer to get a stock pile. I shop at a few store each week for the best deals and pick up what I need and the good/free deals. Shoprite, Stop & Shop, CVS are my main stores. Then Target & Walgreens . All my trips are small- medium size.

I’ve not only been able to have a supply of things for myself but to give to friends or donate.

I started off with what I could get then started thing hey I need razors let me look up and see how I can grow a stock pile on that. Then make up… I started seeing people post their hauls of great deals on make up…free / cheap/ ect. I want to get those deals. Eventually I learned and was able to start a stock pile with make up too. CVS is a great place because you can use personalized coupons from their red machine & manufacturer coupons plus earn extra care bucks & beauty bucks when you join the program (it’s free) ! Target is good too because you can use their store coupon, cartwheel app, and manufacturer coupons. There are also gift card deals.

Remember to email you favorite companies and ask if they have coupons. Sometimes they will send some to you , maybe even for a free product.

I recently moved and took pictures of my stock pile . All of this stuff I mostly got for free or made money (with overage or rebate apps)
