Influenster sent me a box full of goodies to kick off the Summer….though Summer is almost ending .  I love in Florida and Summer is all year long… ok maybe we have a week of “Winter” lol

C’EST MOI Gentle Foaming Cleansing Gel 

This facial wash is fragrance free which I love. Its also gentle on the skin.Its lightly foaming formula contains organic aloe, calendula and extracts of strawberry, kiwi and apple to help condition and nourish the complexion, leaving skin clean, calm and balanced. My skin felt good & clean after washing my face ( I used it nightly) and my face didn’t feel tight or dry.

Shea Moisture

My legs & body have been super soft & hydrated using this Shea Moisture Raw Shea Butter lotion . It has myrrh & frakincense and I love how it smells ! My legs are ready for shorts and dresses all year round!

 

 

Mrs Meyers Body Wash

Squeaky clean & smelling great thanks to these Mrs. Meyer’s clean day body washes. I think out of the 3, the rain water scent is my favorite. It reminded me of Summer days getting ready to play outside all day.  It put me in a good mood and smelled oh so good.

Tend Skin

While I didn’t necessarily have a need for this just yet, I did apply after shaving my bikini area just as a precaution before weekend beach time . Just be careful because it will sting a little ..oops!

Impress Nails

I love this elegant style with a fun accent nail. I haven’t used these because my job requires me to constantly use my nails and Im sure they would pop off.  I have heard great things about these in the past though . They have so many styles to choose from which is great.  Everything from elegant to bright & bold.

Tortellini with Pesto & Roasted veggies

Tortellini with roasted veggies & pesto

Ingredients: 

  • zucchini
  • squash
  • bell pepper
  • red onion
  • mushrooms
  • grape tomatoes
  • olive oil
  • garlic
  • salt & pepper
  • tortellini w/ cheese
  • spinach
  • pesto ( homemade or bought)

PESTO

  •  I used about an 8-10 oz bag of spinach
  • 2-3 cloves of garlic
  • 1/2 parmesan cheese
  • 1/2 cup cashews
  • 1/4- 1/2 cup olive oil
  • salt & pepper
  • juice 2 lemons lemon juice
  • basil

Blend well . When  adding lemon juice , taste it as you add


Cook tortellini – add to big bowl

Cut and drizzle oil on veggie ( zucchini, squash, bell pepper, onion and mushrooms) on a baking sheet . Bake on 425 for 10 minutes

Add tomatoes & garlic . Bake another 10 minutes

Add spinach for one minute.

Add roasted vegetables too tortellini. Pour pesto on top. Mix.

  • Mccormicks garlic herb & wine marinade

Place in oven, cook until  done

Pepper taco bowl

Taco Pepper

  • Bell Pepper ( your choice)
  • ground beef, turkey, chicken ( your choice)
  • cheese
  • black beans
  • tomatoes
  • taco seasoning

I mix the meat, tomatoes, black beans, taco seasoning and cook until done.

Scoop mixture into bell pepper , sprinkle with cheese.  Cook in oven . You can even put the pepper in the oven beforehand to get it started.

Chicken Feta Spinach Meatballs with Zucchini

 

I received a new kitchen tool and wanted to use it. I messed up a little bit because I realized the tool is mostly for shredding. I thought I could use it to get zucchini noofles but got shreds instead. Oops! lol Still tasted great though. Will be making these again.

FetaChickenMeatballs

Ingredients:

  • Spinach
  • garlic 3 minced
  • olive oil
  • feta cheese about 4-5 oz
  • 1lb ground chicken
  • 1 egg
  • panko bread crumbs
  • salt & pepper 1/4 teaspoon
  • oregano 2-3 tablespoons
  • 1 lemon ( squeezed)
  • butter ( 1 tablespoon)
  • red pepper flakes ( just a pinch or more if you love it)
  • zucchini ( made into zoodles)

Preheat oven to 400 F.  Add parchment paper to baking sheet.

Combine ground chicken, garlic, salt , pepper, olive oil,  feta, spinach,panko, oregano, egg. Mix well and form small meatballs. Place on sheet ad bake until done 20-25 minutes.

Make zoodles. In pan low-medium heat add butter & olive oil.  Add red pepper flakes & garlic for 1 minute.  Stir in lemon juice. Toss in zoodles and coat. Cook until tender. ( 5 minutes)

Add zoodles to plate/ bowl . Place meatballs on top. Sprinkle with more feta if desired. lemon, feta, red pepper flakes…  Loved the flavor. It was filling, refreshing, light. I brought some for lunch .
