Dinner Inspo

I feel like I haven’t shared many recipes on my blog in awhile. I do share on instagram.

I’ve tried a few new dishes and liked them all. I feel like I sometimes get in a rut when it comes to dinners. I end up making the same stuff .

 

Dinner one :  Spinach Chicken Avocado burgers

Ground chicken, avocado cut into chunks, spinach, sliced ( about 1/2 cup) , lemon, 2tbsp  oatmeal, 1/2 tsp garlic powder, 1/2 tsp onion powder, salt, pepper,  oil

I mixed the ingredients and formed patties. Cook until done.

Mash avocado , lemon, salt, pepper and make into a spread for the top of your burger.

  • You can also use a lime instead of lemon

 

Dinner 2 : Chicken, Roasted potatoes, & green beans

This one was very simple.

Chicken, red potatoes (diced) , & green beans ( fresh, frozen , or canned)

Mix in Italian dressing mix. Cover with foil.  Put in over at 350 until done.

 

Dinner 3- Creamy dill chicken

Chicken, Dill, Yukon gold potatoes, green beans, chicken stock concentrate, sour cream, salt & pepper.

Dice potatoes, discard dill from stems. Preheat over to 450.

Toss potatoes on baking sheet with oil, salt & pepper. Bake until golden brown.

Heat oil in pan. Pat chicken dry. Season with salt & pepper. Cook until done. Remove and plate to the side.

Add green beans to baking sheet with oil, salt , & pepper. Bake for 15 minutes

In same pan add dill , sour cream, 2 tbsp of water, chicken stock concentrate. Scrap bottom & stir. Add salt & pepper. ( it also called for 1 tsp of mustard but I dont like it)

Slice chicken, add potatoes, green beans. Drizzle sauce over everything. Add dill to taste.

This was flavorful & easy!

Dinner 4- Vegetable Polenta Casserole

I found this recipe on BudgetBytes .   

cornmeal, zucchini, squash, onion, mozzarella, spinach, salt, pepper, paprika, basil, vegetable broth. – Easy simple, delicious. Great vegetarian or vegan meal.

Dinner 5- Quinoa Crusted Chicken

This was very filling.  Great alone, on salad, cut into bite size pieces for nuggets.

Chicken, cooked quinoa, your favorite spices, egg, salt pepper

. Bake at 350 for about 20 minutes.

cook quinoa, mix in spices

Mix egg, salt , & pepper. Dip chicken in egg then quinoa, place on baking sheet.

Dinner 6 – Chicken , Bacon, & avocado quesadilla
