Whether you are stretching your dollar or just want a quick dinner this is perfect because you can customize it to your liking.
What you need:
Rice ( I cook 1 cup)
Ground Chicken, Turkey , or beef – I used chicken
15oz can of black beans drained ( or kidney/ pinto)
Cheese- I like cheddar
Bell Pepper (optional) – diced
Onion ( optional) – diced
Other items you could add:
Avocado , Olives, Tomato, Lettuce
even zucchini, or mushrooms
Cook rice according to directions. I like adding some salsa to the rice when its done cooking. Just enough to coat.
If adding the pepper & onion.
Put some oil in a pot. When hot, add onion. Stir for 1-2 minutes. Add pepper. Story for 2 minutes.
Add ground meat. Break up and stir.
Add taco seasoning ( or if you make your own add it to pot) When the meat is almost fully cooked
Stir to coat. Add 1/2 – 3/4 cups of water Stir again
Add black beans. Stir
When done add to a bowl top with cheese & salsa or put mixture in a wrap and enjoy.
