What you need:
12 oz flank steak
1 medium red onion, diced
1 lime, juiced & zested
2 cloves of garlic, minced
3/4 cup Basmati Rice
1 bunch cilantro, chopped
2 tablespoons balsamic vinegar
2 tablespoons olive oil
In small pot heat 1/2 tablespoon olive oil over medium heat. Add half of the diced onion and cook, tossing 2-3 minutes , until softened. Add rice to the pot & toss to coat, then add 1 1/2 cup of water and a large pinch of salt to pot. Bring to a boil, cover, & reduce to a simmer for 15 minutes, until rice is tender.
Take this time to mince, cut, chop the other ingredients. Take mango and slice into matchstick sized pieces. ( without peel).
Make the marinade: in a shallow dish, combine 1 1/2 tablespoons of olive oil, balsamic vinegar, garlic, salt, pepper. Add steak to the dish and flip to coat in the marinade. Season with salt & pepper. Let marinade as long as you want.

Make the mango slaw: toss the mango, some cilantro, diced onion ( to taste), lime zest in a medium bowl with the lime juice.
Heat large pan over medium-high heat. Add steak and cook 4-5 miinutes per side, until cooked to desired doneness. Set aside to rest for 5 minutes, then thinly slice against the grain.
Stir rest of cilantro leaves & zest into the rice.
Place the cilantro rice on plate, top with steak & mango slaw.
