Broccoli white bean soup 

This is one of my favorite dishes for a few reasons. It has a few ingredients, its healthy for you, and it tastes great.

   

Broccoli
coconut oil or olive oil
15 oz cannellini beans, drained
onion, diced
garlic, minced
Vegetable broth
Salt & Pepper
Parmesan Cheese

First steam you broccoli.

  

Put oil in pan.
Add onion until translucent.
Add garlic.
Add beans.
Add Add salt & pepper.
Add vegetable broth.

Next add you broccoli to the pot.

Then in small batches add it to a blender.
Add to bowl, sprinkle with some parmsan cheese.

The blended beans make this creamy ( without adding any milk).
