Chicken sausage , kidney bean, & spinach hash skillet


•Fully cooked chicken sausage with spinach , diced
•Olive oil
• 1- 1/2 lbs of potatoes cut into bite size chunks
•kidney beans , rinsed & drained
•spinach about 2 ounces
•salt & pepper
•garlic powder
•onion powder
•italian seasoning
•Cheddar cheese 1/2-3/4 cup

-Cook potatoes in water until just tender.
-Heat oil in skillet. Cook chicken sausage and white part of scallions.
Stir often until scallions are slightly softened .
-Add potatoes and sauté until browned.
-Season with paprika, italian seasoning, salt ,pepper,garlic powder, onion powder. Stir
-Add kidney beans, green part of scallions, & spinach. Stir.
– You can stir in the cheese or sprinkle on top when you put it in your bowl.


Very filling!

Loaded Potato Soup

I don’t eat creamy stuff to offer , bacon , or even potatoes but I was in the mood for some potato soup.
I also wanted to try out Swanson Cream Starter that Crowdtap sent me awhile back.


What you need:
•Swanson Cream Starter
•1 lb potatoes cut into bite size pieces ( about 1/2 inch)
• Onion, large , diced
• Cheddar cheese , shredded
• Scallions or chives , chopped
• Bacon about 8 slices
• Garlic , minced
• Seasonings : salt, pepper, paprika, onion powder, garlic powder

You can find the recipe on their site here I added the caramelized onions, garlic powder, onion powder & paprika,

In a pot cook bacon until crisp ( you can dice before or after , I cut them up after )

Remove bacon , drain on paper towels

Keep 2 tablespoons of the dripping in pot , pour out the rest.

I caramelized the onion ( you can do this before the bacon or in another pan)

Add diced potatoes & caramelized onion into pot with bacon drippings.

I added paprika, salt , pepper.

Cook until tender-crisp (5-10 minutes) stirring occasionally.

Add garlic and stir for 1 minute.

Stir in cream starter & heat to boil. Reduce heat to low . Cover and cook for 20 minutes or until potatoes are tender.

Stir occasionally

I added garlic powder, onion powder

Taste it I thought it needed a little more salt , pepper, paprika.
(Season to your liking)

Stir in half the diced bacon and cheddar cheese. I also added one scallion chopped.

( this is where is get good and gooey)

Sprinkle with bacon and scallions (and cheese)

I was quite surprised with the cream starter .

Taco meat over zucchini noodles

I was feeling like tacos but didn’t want wraps, shells, scoop with tortilla chips, or as a salad.

Then I threw this together.


What you need:
1-2 zucchini
Ground turkey
Taco seasoning
Black beans

Cook meat as directed
Add diced tomato and black beans

Make zucchini noodles with spiralizer
In pot put a little bit of water , put zucchini noodles in until tender.

I topped with diced avocado.

If you want a little crunch crush up some tortilla chips on top.
Feel free to add some cheese too.
Add your favorite toppings 🙂

Yummy Black Bean Burger


What you need:
2 cans of black beans ( need 1.5 cans) drained & rinsed
Oatmeal 1/2-3/4 cups
Mushrooms about 1 1/2 -2 cups
minced garlic
Red bell pepper ( I only used 1/4 of it)
1 Egg
Hamburger buns
Olive oil
Seasonings & spices I used salt, pepper, paprika, garlic powder, onion powder

I found the recipe on Women’s Health , I changed & added some stuff. That’s one thing I love about cooking. You can play around with flavors based on what you like. Make swaps, add seasonings, have fun & experiment while cooking!

*I found the recipe it was a little to watery and mushy. So I added some more oatmeal and mushrooms.

Place half the black beans, mushrooms, oatmeal, garlic, seasonings, & egg in a blender or food processor until mixed. Add other half of black beans and pulse until mixed or you can just stir so they don’t break up.I like when some black beans are whole.

You can either make these in a pan, grill pan or like I did oven.
Preheat oven to 350
Coat a cookie sheet with olive oil or cooking spray. Form patties and place on cookie sheet.
Put in oven for about 20-30 minutes. You want them to be firm.
If you want cheese, add cheese the last few minutes until melted.

I toasted my onion bun, placed spinach on top, placed black bean burger, top with avocado salsa mash.

I took half and avocado mash with fork until your desired consistency ( i like it a bit chunky) and added 1-2 tablespoons of salsa.

I served mine with sauteeed zucchini.
