Chickpea brown rice burger






  • 2 cups cooked and drained chickpeas [about 1 1/2 cans 15oz ]
  • 1 cup cooked brown rice
  • 1 shallot, minced
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh parsley
  • Coarse salt and pepper
  • 1 large egg, whisked
  • 2 tablespoons olive oil
  • Red onion, sliced, for garnish
  • Roasted red pepper, sliced, for garnish
  • Green-leaf lettuce, for wrapping


Put chickpeas, rice, garlic, shallot, salt, pepper, egg in food processor. Mix until smooth.

Form into 1/2 inch thick patties

Heat olive oil over medium heat. Add patties cooking until golden brown ( about 4 minutes each side)

Place on lettuce , add your toppings.


I really liked the red pepper and red onion as my toppings 🙂

I feel like it was missing something, maybe the mustard gives it that something extra. I personally hate mustard. You know when you are at a picnic/party/bbq and you go to reach for something on the table and someone was messy and then you get whatever condiment on your arm? I freak out ( on the inside) for a few seconds lol- I hate the color, texture, smell eww.
