Throw it together lunch -Brown rice w/peppers & broccoli



I feel that throw it together dishes turn out great…most of the time.

I had a red and yellow pepper that were going to go bad and wanted to use them up.

So I was going to sautee them and freeze them and then figure out what to use them in.

Then I started to get hungry. So I looked around to see what I had.


1 cup instant brown rice

2 peppers ( yellow & red)

1/2 medium onion




1 cup chicken broth ( for rice)


Instead of making the rice with water I used chicken broth for more flavor.

steam broccoli

add some olive oil to pan, sautee onion wait until translucent

Add peppers ( cut up to your liking), pepper to season & garlic

wah*lah quick, easy , & healthy lunch ( or dinner)

Fashions Night out in NYC- Was promoting The RealReal- Im in the back. We walked around in heels for a few hours, I now have 4, yes 4 blisters on one foot OUCH!!



How pretty is the sky and water ?? I had to go to the mini beach and take pictures. I also took a video so I could see the pretty view and hear the waves so when its all snowy and cold I can pretend Im in that moment haha

Chickpea brown rice burger






  • 2 cups cooked and drained chickpeas [about 1 1/2 cans 15oz ]
  • 1 cup cooked brown rice
  • 1 shallot, minced
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh parsley
  • Coarse salt and pepper
  • 1 large egg, whisked
  • 2 tablespoons olive oil
  • Red onion, sliced, for garnish
  • Roasted red pepper, sliced, for garnish
  • Green-leaf lettuce, for wrapping


Put chickpeas, rice, garlic, shallot, salt, pepper, egg in food processor. Mix until smooth.

Form into 1/2 inch thick patties

Heat olive oil over medium heat. Add patties cooking until golden brown ( about 4 minutes each side)

Place on lettuce , add your toppings.


I really liked the red pepper and red onion as my toppings 🙂

I feel like it was missing something, maybe the mustard gives it that something extra. I personally hate mustard. You know when you are at a picnic/party/bbq and you go to reach for something on the table and someone was messy and then you get whatever condiment on your arm? I freak out ( on the inside) for a few seconds lol- I hate the color, texture, smell eww.
