Tortilla crusted chicken w/avocado cilantro lime sauce & tostitos simply natural yellow corn tortilla chips stuffing. Can’t wait to try them out and use my cute dishes!
So I’ve been finding all these recipes from pinterest and I thought this one was so delish. It is also very filling.
What do you need :
3 cups of black beans
1 yellow pepper, diced into small pieces
1 small diced onion
2 garlic cloves minced
large tomato, diced
3 tablespoons chopped cilantro
Lentil tacos– never know the difference
1 tablespoon extra-virgin olive oil
1/2 cup yellow onion, diced
1 clove garlic, minced
Salt, to taste
1 cup dried brown lentils, rinsed well
2 and 1/2 cups vegetable broth
Garnishes I used:
Guacamole, cucumber, lettuce, olives, vegan cheese
In saute pan add oil over medium heat
Add onion, garlic, salt and cook until onion is soft
Add lentils & taco seasoning, mix well.
Stir in vegetable broth.
Reduce heat, cover. Check lentils and stir occasionally to avoid burning for about 20-25 minutes.
Remove cover, allow to thicken about 7 minutes
Transfer to bowl and use a potato masher to gently mash to your desired consistency.
Now make your taco! Use hard shells or wraps 🙂

First , I needed to get gas. My friend Shawn wanted to make sure it was secure. When I got in the car and saw this I couldn’t stop laughing.
My burger mixture :: ground turkey , shredded carrot, red onion , garlic, spinach , zucchini ( just started adding this. I think it makes it nice and juicy) and seasoning salt, pepper, ect. On the grill it went with corn on the cob, zucchini, mushrooms . I also made baked red potato fries
– I sometimes put mushrooms in the burger as well
Been a while since I’ve been in front of the camera . Today I worked with Kvon
I love making this dish in the spring and summer on the grill .Chicken skewers marinated in Mccormicks grill mates garlic , herb and wine or zesty herb. I put chicken ( of course) , zucchini, red onion, baby bella mushrooms, and small tomatoes. I then put it over classic suddenly pasta. I had extra seasoning packets of the mix and used a mix of Barilla piccolini mini pastas . Tomato & carrot bow ties ( farfalle) and zucchini & spinach wheels. So yummy.
Tonight I had a portobello burger first time making it. It was ok need to work on the marinade. I used rosemary, thyme , lemon juice , olive oil, last minute I put a splash of red vinegar which could have been the problem for me. I also bought these chicken and spinach sausages which were yummy.Served corn on the cob , zucchini and sweet potato/red potato mixed fries on the side. So stuffed , did I mention I have a photoshoot tomorrow ? Maybe I should have had less but was too good to stop 🙂
